My Fool Proof Chocolate Cup Cake Recipe

So, I am not this AMAZING baker, but I do however LOVE to bake and eat… I think that makes me pretty awesome, ha!
My little cutie (Emilio), enjoys helping out in the kitchen so I try to make things simple enough for him to participate. His favorite are muffins (will share some of those recipes with you soon), but for Daddy’s birthday we went ahead and made his favorite chocolate cupcakes with buttercream icing. I’m not a big fan of chocolate (weird, I know), I do however, love these! They are quick and moist; besides, I will take a homemade cupcake any day. No special occasion needed.
Now this awesome recipe was borrowed from House of Nash on Pinterest. Who else is a Pinterest fan?! Definitely my "go to" for pretty much anything. Look for me on Pinterest (Click the red PINTEREST) so we can share pins and ideas.
Here are the items that I used, which are usually already in my cupboard and fridge (Minus the buttermilk), Don’t keep buttermilk at hand? Make HOUSE OF NASH'S homemade buttermilk which she shares on her post.
I literally combine all the ingredients in one bowl and let my mixer do it's thing. That may not be the proper "Baker" way, but it still comes out delicious. If you would like to make this into a cake instead of cupcakes, no problem! Instead of baking it on 350 degrees for 18-20 minutes, leave it in for 30-35 minutes based on a a 9 inch pan.
INGREDIENTS
· 1 cup all-purpose flour (My favorite is King Arthur Flour)
· 1 cup granulated sugar (Domino)
· 1/2 cup unsweetened cocoa powder (Good ol’ Hershey’s)
· 1 teaspoon baking powder (Arm & Hammer)
· 1/2 teaspoon salt
· 1 large egg, room temperature (We usually have caged free brown eggs or whatever is at hand)
· 1/2 cup buttermilk, room temperature (light cultured buttermilk)
· 1/2 cup vegetable oil (Wesson)
· 1 teaspoon vanilla (Market Place Pure vanilla extract… I always get pure vanilla)
· 1/2 cup very hot water (Tap… ha!)
I have made this recipe literally like a dozen times. However, the first time, like with any new recipe, I was a little nervous. The batter appeared very watery, however, that’s the magic trick. The hot water appears to activate everything and it’s what helps create all the delicious moisture in this cake. So, no worries Chica, you did nothing wrong. It will come out amazing!
Emilio literally mixed everything together, that’s how easy it is. I just had everything pre- measured, which I always do anyway. I get a little overwhelmed at times going back and forth on a recipe to double check that everything is correct. So, I just do it all ahead of time and it actually saves me a lot of time. Especially when I have a little one talking my ears off during the process.
4 Ingredient Buttercream Recipe:
Now,this is my personal buttercream frosting recipe… you can even throw some mini chocolate chips in there to make it a little extra special. It's quick and super easy!
4 Ingredients:
- 4 cups Powdered sugar
- 2 tsp Vanilla
- 1 cup of Butter
- 1 tbsp Milk
Literally... that's all. Leave your butter out for a couple of hours to get it into room temperature. Do not microwave! Once again, I just throw it all in the mixer and let it do its thing! Don't have a mixer? A hand mixer would work just fine! Don't have a hand mixer? Then girl, get those arms to work by mixing manually with your favorite wooden spoon.
